Carrots in harvest season are my favorite and no matter how you choose to season them they are so good.
These are my go twos, both start out the same but have different toppings. Optional to peel (if I get carrots from the market I do not) Lather in S&P and olive oil Bake the Carrots for 30-60 minutes on 200 c Carrots, Pomegranate, Feta cook the pomegranate on at the end so the juices melt, top with feta and some seeds at the end if you have them. Carrots, Greek Yogurt, Honey, Pistachios, Dill Bake the Pistachios at the End with the Carrots, after top with dill and then mix greek yogurt and honey on top at the very end to create a labneh sauce Another goodie if you want sweet & spicy is using harissa.
