When I first started dating Evan, I found out his favorite food was meatballs. That started my journey on making meatballs at least once a week. The first time I decided meatballs was on the menu, I went to Plum Market in Chicago. The lady behind the meat counter gave me some tips and tricks. Instead of eggs she used potato chips and crunched them up. She also added celery, carrots, and onion to her mix. I have a gluten allergy, so for my sake I used gluten free potato chips. Sometimes i will add all three binders: the celery mix, egg, and potato chips. Sometimes I will change up the meat I use and go for ground chicken or turkey. Feel free to play around with the ingredients once you get the jist of it down. Enjoy!
Ingredients: 1 lb. ground italian sausage 1 lb. ground pork 1/2 large back potato chips 1 cup onion 1 cup chopped celery and carrots 2 cloves garlic oregano, dried parsley, thyme, s&p Directions: Preheat oven to 400 In a food processor combine the celery, carrots, onion, garlic Once the mix is ground up to a "chopped" consistency drain the water out using a cheesecloth Add mixture to bowl with ground meat Add crunched potato chips Add oil , seasoning Roll into balls Cook for 20 mins |
